We offer an array of products to meet all of your specialty and holiday needs – fantastic prime ribs, top quality turkeys, tender legs and racks of lamb, smoked hams, and whole pigs for roasting. We also offer custom wild game and livestock processing. All of the meat products at Bud’s Custom Meats are prepared and smoked on the premises.
As a fourth-generation butcher, Matt Gamba is passionate about carrying on the traditions established by his father, grandfather and great-grandfather.
BEEF
Beef
Many factors contribute to quality beef—where and how the animal was raised, what it was fed, how it was slaughtered and, last but not least, how it was dry-aged.
Matt Gamba, a fourth-generation meat cutter, runs the shop and sells beef that comes from cattle raised on open pastures of locally owned farms and ranches in Sonoma, Marin, Mendocino and Lake Counties. These animals are free of antibiotics and growth hormones and are 100% grass fed in season and supplemented and finished with locally grown grains that are devoid of pesticides.
You can order whole, half or quarter beef —grass or grain fed. All of our ground beef is 100% pure USDA chuck and contains no additives. We offer certain cuts of pasture-raised, milk-fed veal along with marinated meats prepared using Matt’s renowned marinades and sauces.

Pork
Bud’s Custom Meats offers a variety of pork—fresh, smoked, or marinated. From bacon and pork chops to ham and baby back ribs, our meats are juicy and filled with delicious flavor.
Our pork is pasture-raised on locally owned farms, and we offer wholes and halves. The animals are free of preservatives, water injections, antibiotics, growth hormones, and nitrates. They’re fed spent grain from local breweries as well as vegetables, roots, and milk from area farms and dairies.
Our sausage products are in a class of their own. We sell bratwurst and chorizo along with smoked sausages like venison summer sausage and hot Hawaiian with pineapple—all hand made using organic spices. Lamb
Some of the best lamb in the country is raised in Sonoma County on open pastures. Bud’s Custom Meats is known for the quality of its meat and humane processing practices.
We offer pasture-raised, grain-finished lamb. Our 100% grass-fed lamb is available in the summer months. Like all of our meats, our lamb is antibiotic and hormone free.
We’re proud of our lamb sausages, including merguez, a classic spicy lamb sausage of North African or Middle Eastern cuisine, and our enticing lamb interpretation of a classic sweet Italian sausage.

Matt Gamba, owner of Bud’s Custom Meats, is a jerky connoisseur who has been creating from-scratch recipes at his butcher shop since 1975.
We’re known for our tantalizing jerky and snack sticks handcrafted using only the highest quality beef, grass-fed beef, pork, venison, wild boar, and buffalo. Our meats are trimmed of fat, sliced, and bathed in a mouth-watering sweet and tangy marinade for three to four days, then racked and dried in our wood-burning smokehouses. Our grass-fed beef jerky contains salt, pepper and garlic.
Cowboy Candy, Bloody Mary and Venison are but a few of our tried-and-true selections. Our jerky is the best around. Absolutely!

Sausages – Fresh & Smoked
For taste, texture and Old World traditions, our skilled butchers hand-make the sausages sold at Bud’s Custom Meats. The shop was founded in 1975 by Lloyd “Bud” Gamba, the family patriarch. In 1997 Matt Gamba, Bud’s son, took the reins. More than 40 years later, some things haven’t changed. We’re still making sausage the old-fashioned way, by hand, but we’ve expanded our recipes for sausage, jerky and marinated products.
Our sausages and grinds include beef, pork, lamb, chicken, and more. There are no fillers in our sausages, and we offer a delightful selection of gluten-free sausages like chicken apple, chorizo, and linguisa. Pure goodness!

We remove the bones, tie them back on, and send them out with our own seasoning packet. Tender, juicy, fabulous!
Award Winning Smoked Ham
We’ve been smoking hams for over 30 years. We use a brine of maple sugar cure and smoke over a hickory fire. Bone-in or boneless, these are what hams are supposed to taste like!
